O artigo tem objetivo de descrever os processos utilizados na administração de materiais no setor de alimentos e bebidas em um hotel executivo de rede nacional. Os procedimentos metodológicos compreendem um estudo de caso realizado no Hotel Slaviero Executive Florianópolis/SC. A coleta de dados se deu por meio de documentos do hotel e de entrevista realizada com o responsável pelo almoxarifado. Nos resultados encontrados foi verificado que o almoxarifado realiza a compra de materiais conforme a taxa de ocupação do hotel e o histórico de consumo. Quanto às atividades relacionadas ao estoque, observou-se rigoroso controle de entrada e saída de materiais, mediante conferência e registro em documentos padronizados. Por outro lado, notou-se sobrecarga de atividades no reduzido quadro funcional do almoxarifado, tornando o setor predominantemente operacional. Uma situação que, aliada a outros fatores, possivelmente limita a contribuição estratégica da administração de materiais para o alcance de resultados da empresa.
The article aims to describe the processes used in the administration of materials in the foods and beverages sector in a national network executive hotel. The methodological procedures include a case study carried in at national network executive hotel located in Florianópolis/SC. The collection of data was done through hotel documents and an interview with the person responsible for the warehouse. In the results found it was verified that the warehouse purchases materials according to the occupancy rate of the hotel and the history of consumption. As for inventory-related activities, strict control of material entry and exit was observed, through conference and registration in standardized documents. On the other hand, there was an overload of activities in the reduced functional staff of the warehouse, making the sector predominantly operational. A situation that, together with other factors, possibly limits the strategic contribution of supply management to achieving company results.
