Objetivou-se analisar as condições higiênico-sanitárias das feiras e mercados públicos de Manaus-AM, que comercializam carne bovina. Avaliou-se estrutura, instalações, manipuladores e análise microbiológica. A limpeza e higienização das instalações em 71% estavam precárias; 57% dos manipuladores com vestimenta inadequada. Os equipamentos apresentavam superfícies inadequadas em 71% e as mesas e bancadas com rachaduras em 57%. Isolaramse os gêneros Staphylococcus spp. em 100%, Streptococcus spp. 18%, bacilos gram-negativos 22% e bacilos grampositivos 16%. Os estabelecimentos avaliados não atendem integralmente as exigências das normativas vigentes, podendo ocorrer contaminação das carnes. Ações de Educação em Saúde foram executadas e devem ser continuadas no intuito de melhorar a higiene e boas práticas de manipulação.
The objective was to analyze the hygienic-sanitary conditions of the fairs and public markets in Manaus-AM, which sell beef. Structure, facilities, manipulators and microbiological analysis were evaluated. The cleaning and hygiene of the facilities in 71% are precarious; 57% of handlers with inadequate clothing. The equipment had inadequate surfaces in 71% and the tables and benches with cracks in 57%. The genera Staphylococcus spp. in 100%, Streptococcus spp. 18%, gram-negative bacilli 22% and gram-positive bacilli 16%. The establishments evaluated do not fully meet the requirements of the regulations, contamination of the meat may occur. Health education actions have been carried out and should continue with no intention of improving hygiene and good handling practices.
